3 cups vegetable broth

2 bay leaves

2 small zucchinis, sliced

Salt and pepper, to taste

2 Oz. Sliced Shiitake mushrooms, chopped

4 Oz. Cauliflowers, florets

2 sweet potatoes, peeled and cubed

4 red onions, cut into wedges

1 cup of sweet tomato

2 cloves garlic, minced

2 teaspoons, dried savory leaves

2 -3 cups cooked couscous, warm, for serve


Combine all the listed ingredients in an instant pot (except cooked couscous).

Cover the pot and adjust the cooking time to 7-10 minutes at high pressure.

After 15 minutes, release the steam naturally.

Serve the cooked stew with cooked couscous.
