2 large red onions, peeled and sliced

2 green bell peppers cut into strips

1 large zucchini, peeled and sliced

1 cup red tomatoes, diced

4 tablespoons olive oil

2 tablespoons of water

2 cups boiled rice, side servings

Salt, to taste

Freshly grounded black pepper, to taste


Combine onions, bell peppers, tomatoes, zucchini, olive oil, salt, and pepper in an instant pot along with 2 tablespoons of water.

Cook on high for 7 minutes.

Afterward, open the pot by the quick release method.

Serve with the cook boiled rice.
